4. Fermentation

4. Fermentation - Yeast is added to the wort and converts the malt sugars into alcohol. Sharp's use shallow open 'Cornish Square' fermentation vessels which allow the yeast to produce delicate fruity flavours while remaining healthy and viable for use in a subsequent brew. Heat produced by the yeast during fermentation is recovered and used for heating water for cleaning and steam generation. Each fermentation produces around 200kg of excess yeast. This yeast is sent to local farms to feed pigs.
